Hey loves! How are you enjoying the Nairobi heat? It has been extremely hot for the past couple of days but we take it in good faith! I absolutely love mango season, which normally begins in January (with the heat) and ends at around March/April. I love mangoes because they are a great substitute for bananas in smoothies and other recipes, due to their natural sugar content.
I am usually very skeptical about mixing sweet and savory ingredients in a recipe. However, I decided to go outside my comfort zone with this mango salsa and I must say, it it turned out really amazing, so much so that I could not wait to share the recipe with you guys! The ingredients complimented each other quite well and so they provided a balance in the flavors. The salsa is an amazing dip for sweet potato fries or crisps and the recipe is really quick and easy. 2 Ripe Mangoes, peeled
1 Ripe Avocado
1 Red Onion
1/2 Lime or Lemon
1 tsp White Vinegar
1 tsp Olive Oil
Salt & Black Pepper to taste
- Dice the first three ingredients.
- Mix the lime juice, vinegar, olive oil, salt and pepper in a bowl to make a dressing.
- Pour the dressing over the mango mixture and mix thoroughly.
- Refrigerate then serve with crisps or sweet potato chips.
